🥒 Crispy Zucchini Recipe (Tastier than Meat!)

⏱ Ready in: 10 minutes

Serves: 2–3


✅ Ingredients:

  • 2 medium zucchinis
  • 1 egg
  • 1/2 cup breadcrumbs (panko for extra crunch)
  • 1/4 cup grated Parmesan cheese (optional but tasty)
  • Salt & black pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Olive oil (for frying or drizzling)

👩‍🍳 Instructions:

  1. Prep the Zucchini
    Wash and slice zucchini into thin rounds or sticks (like fries or chips).
  2. Season the Breadcrumbs
    In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  3. Coat the Zucchini
    • Beat the egg in a separate bowl.
    • Dip zucchini pieces in the egg, then coat with the breadcrumb mixture.
  4. Cook
    Option 1 – Pan-fry:
    • Heat olive oil in a skillet over medium heat.
    • Fry zucchini until golden and crispy (2–3 minutes per side).
    • Drain on paper towels.
    Option 2 – Air-fry or Bake:
    • Preheat oven or air fryer to 400°F (200°C).
    • Lightly grease a baking tray or air fryer basket.
    • Cook for 8–10 minutes, flipping halfway.
  5. Serve
    • Serve hot with a dip like garlic yogurt, tzatziki, or marinara!

💡 Tip:

Want it vegan? Skip the egg and use a plant-based milk or aquafaba as the binding agent.
