For 2–3 servings:

  • 3–4 medium potatoes, peeled and diced
  • 4 large eggs
  • 1 small onion, finely chopped
  • 1 small bell pepper (optional), diced
  • 2 tablespoons olive oil or butter

  • Salt and pepper, to taste
  • ½ teaspoon paprika (optional for color and flavor)

🍳 Instructions

  1. Boil or Parboil the Potatoes
    • Place the diced potatoes in salted water and boil for about 5–7 minutes, just until slightly tender (not mushy).
    • Drain well and pat dry with paper towels.
  2. Fry the Potatoes
    • Heat olive oil or butter in a large skillet over medium heat.
    • Add the potatoes and cook until they turn golden brown and crispy, about 10 minutes, stirring occasionally.
  3. Add the Aromatics
    • Add chopped onion, bell pepper, and minced garlic to the skillet.
    • Cook for another 3–4 minutes, until the onions become soft and fragrant.

    • Push the potato mixture to create small wells.

  5. Cook the Eggs
