3-Ingredient Jam-Filled Puff Pastry Jack’O’Lantern Pumpkins

To make the puff pastry pumpkins, puff pastry is cut into pumpkin shapes using a template. Then, faces are cut into half of them before they are brushed with egg and baked in the oven. Finally, they get sandwiched with apricot jam for a sticky and sweet fruit-flavored filling.

  • 1 sheet store-bought puff pastry, thawed if frozen
  • ¼ cup apricot jam (or any jam you love — strawberry, raspberry, or peach work great)
  • 1 egg, beaten (for egg wash)

Step 1: Prepare the Puff Pastry

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Unroll the puff pastry sheet on a lightly floured surface.
  • Use a pumpkin-shaped cookie cutter (about 3–4 inches wide) to cut out even shapes — you’ll need two pumpkins for each pastry (top and bottom).
