Classic Vanilla Cake with Watkins Vanilla Powder

This soft, fluffy, and fragrant cake is perfect for birthdays, celebrations, or just enjoying with a cup of coffee. Instead of liquid vanilla extract, we’ll use Watkins Vanilla Powder, which gives an intense vanilla flavor without adding extra liquid.


🥣 Ingredients:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 ¾ cups sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 large eggs, room temperature
  • 1 cup milk (whole or 2%)
  • 2 tsp Watkins Vanilla Powder (instead of extract)

  1. Preheat Oven
    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or one 9×13 pan).
  2. Mix Dry Ingredients
    In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream Butter & Sugar
    In a large mixing bowl, beat butter and sugar until light and fluffy (about 3–4 minutes).
  4. Add Eggs & Vanilla Powder
    Add eggs one at a time, beating well after each. Then mix in Watkins Vanilla Powder.
  5. Alternate Flour & Milk
    Add dry ingredients to the butter mixture in three parts, alternating with the milk. Begin and end with the flour mixture. Mix until just combined — do not overbeat.
  6. Bake
    Divide batter evenly into the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & Serve
    Let cakes cool in the pans for 10 minutes, then transfer to a wire rack. Frost with your favorite icing (vanilla buttercream pairs perfectly).
