Ingredients (Makes about 1 quart)
Base Ingredients:
1 can (13.5 oz) full-fat coconut milk
1 cup heavy cream (or additional coconut milk for dairy-free)
¾ cup granulated sugar (or honey/maple syrup)
1 tsp pure vanilla extract
¼ tsp salt
For Extra Creaminess & Flavor:
½ cup sweetened shredded coconut (toasted for extra flavor)
½ tsp coconut extract (optional, for a stronger coconut taste)
1 tbsp rum or vodka (optional, helps keep it soft)
Instructions
Step 1: Prepare the Ice Cream Base
In a saucepan over medium heat, whisk together the coconut milk, heavy cream, sugar, and salt.
Heat gently, stirring constantly, until the sugar is fully dissolved (do not boil).
Remove from heat and stir in the vanilla extract, coconut extract, and rum/vodka (if using).
Step 2: Chill the Mixture
Pour the mixture into a bowl and let it cool to room temperature.
Cover and refrigerate for at least 4 hours or overnight for the best texture.
Step 3: Churn the Ice Cream
Using an Ice Cream Maker:
Pour the chilled mixture into your ice cream maker.
Churn according to the manufacturer’s instructions (about 20–25 minutes).
Add shredded coconut in the last 5 minutes of churning.
No Ice Cream Maker? No Problem!
Pour the chilled mixture into a shallow, freezer-safe container.
Freeze for 45 minutes, then stir vigorously with a fork to break up ice crystals.
Repeat every 30 minutes for 3–4 hours, stirring well each time, until creamy.
Step 4: Freeze & Serve
Transfer the churned ice cream to an airtight container.
Freeze for at least 2 hours before serving.
Scoop and enjoy with toasted coconut flakes, chocolate drizzle, or fresh fruit!
Pro Tips for the Best Coconut Ice Cream
Use full-fat coconut milk – This gives a rich, creamy texture.
Don’t skip chilling the mixture – A cold base makes the creamiest ice cream.
For an ultra-smooth texture – Blend the mixture before freezing.
