Easy Zucchini Rosti with Eggs
Ingredients (Serves 2–3)
- 2 medium zucchinis
- 2 large eggs
- 2–3 tbsp all-purpose flour (or breadcrumbs for extra crunch)
- 1 small onion, finely chopped (optional)
- 1 garlic clove, minced (optional)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika or chili flakes (optional)
- 2–3 tbsp olive oil (or butter) for frying
Instructions
1. Prep the zucchini
- Grate zucchinis using the large holes of a grater.
- Place grated zucchini in a clean kitchen towel, squeeze out as much water as possible (this is key for crispiness).
2. Make the batter
- In a mixing bowl, combine grated zucchini, eggs, flour (or breadcrumbs), salt, pepper, and any optional seasonings or veggies.
- Mix well until everything is coated and holds together.
3. Fry the rosti
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the pan and flatten gently into small pancakes.
- Cook for 2–3 minutes per side until golden brown and crispy.
4. Serve
- Serve warm with sour cream, yogurt, or a fried egg on top for extra protein.
- You can also sprinkle with fresh herbs like parsley or dill for flavor.
