Easy Zucchini Rosti with Eggs

Ingredients (Serves 2–3)

  • 2 medium zucchinis
  • 2 large eggs
  • 2–3 tbsp all-purpose flour (or breadcrumbs for extra crunch)
  • 1 small onion, finely chopped (optional)
  • 1 garlic clove, minced (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika or chili flakes (optional)
  • 2–3 tbsp olive oil (or butter) for frying

Instructions

1. Prep the zucchini

  1. Grate zucchinis using the large holes of a grater.
  2. Place grated zucchini in a clean kitchen towel, squeeze out as much water as possible (this is key for crispiness).

2. Make the batter

  1. In a mixing bowl, combine grated zucchini, eggs, flour (or breadcrumbs), salt, pepper, and any optional seasonings or veggies.
  2. Mix well until everything is coated and holds together.

3. Fry the rosti

  1. Heat olive oil in a skillet over medium heat.
  2. Drop spoonfuls of the mixture into the pan and flatten gently into small pancakes.
  3. Cook for 2–3 minutes per side until golden brown and crispy.

4. Serve

  • Serve warm with sour cream, yogurt, or a fried egg on top for extra protein.
  • You can also sprinkle with fresh herbs like parsley or dill for flavor.
