Ingredients:
200g finely chopped cabbage
3 eggs
½ chopped onion
½ grated carrot
¼ cup chopped spinach leaves
¼ cup oat flour
¼ cup milk
1 teaspoon salt
½ teaspoon ground black pepper
Step-by-Step Preparation:
1. Prepare the vegetables
Wash the cabbage, carrot, and spinach thoroughly. Cut the cabbage and spinach into small pieces, grate the carrot, and chop the onion.
In a large bowl, beat the eggs. Add the milk, oat flour, salt, and pepper. Stir until well blended.
Add the cabbage, onion, carrot, and spinach to the liquid mixture. Stir until you have a smooth, thick, yet pourable batter.
2. Cook the pancakes
Heat a nonstick skillet with a little olive oil. Place portions of the mixture with a spoon and flatten lightly to shape. Cook over medium-low heat for 2-3 minutes on each side, until golden brown and firm.
3. Serve
Enjoy them warm with plain yogurt, a light guacamole, or a fresh salad.
