Zest of 2 large lemons (preferably organic, unwaxed)
🥣 Instructions:
1. Zest the Lemons
Wash and dry the lemons thoroughly.
Use a microplane or fine grater to zest only the yellow part of the peel (avoid the bitter white pith).
2. Mix
In a bowl, combine the sugar and lemon zest.
Use your fingers or a spoon to rub the zest into the sugar. This helps release the essential oils and infuse the sugar with lemon flavor.
3. Dry
Spread the mixture on a baking sheet in a thin layer.
Let it air dry for a few hours (or overnight) to prevent clumping. You can also place it in a low oven (150°F or 65°C) for about 15–20 minutes, stirring occasionally.
4. Store
Once dry and cool, transfer to an airtight container or jar.
Keeps for up to 3 months in a cool, dry place.
