  • 1 large egg (room temperature)
  • 1 cup (240 ml) neutral oil (sunflower, canola, or light olive oil)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice (or white wine vinegar)
  • ½ teaspoon salt (adjust to taste)
  • Optional: pinch of sugar or garlic powder for flavor

👩‍🍳 Instructions

  1. Prepare your tools
    Use a tall jar or mixing container that fits your immersion blender (or a regular blender/food processor).
  2. Add ingredients in order
    Place the egg at the bottom, then add mustard, lemon juice, and salt. Finally, pour in the oil.
  3. Blend
    • If using an immersion blender: place it at the bottom of the jar, start blending, and slowly lift the blender upwards. Within seconds, the mixture will emulsify into a thick mayo.
    • If using a regular blender: start blending on low while very slowly drizzling in the oil until the mixture thickens.
  4. Taste and adjust
    Add more salt, lemon juice, or mustard depending on your taste.
  5. Store
    Transfer to a clean glass jar. Keep refrigerated and use within 1 week.
