How to Make the Creamiest, Dreamiest Pudding

There’s nothing quite like homemade pudding. Smooth, rich, and comforting, it’s a dessert that brings out the best of both worlds: chocolate and vanilla. This recipe combines them into a silky, decadent treat that’s far better than any store-bought mix.

Ingredients (Serves 6)

  • 4 cups whole milk (divided)
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • 100 g (about 3.5 oz) semi-sweet chocolate (chopped or chips)

Instructions

Step 1: Prepare the Base

  1. In a medium saucepan, whisk together sugar, cornstarch, and salt.
  2. Slowly whisk in 3 1/2 cups milk until smooth.

Step 2: Cook the Mixture

  1. Place over medium heat and cook, whisking constantly, until the mixture thickens and starts to bubble (about 6–8 minutes).
  2. Remove from heat.

Step 3: Temper the Egg Yolks

  1. In a small bowl, whisk the egg yolks with the remaining 1/2 cup milk.
  2. Slowly add a ladle of the hot mixture to the yolks while whisking, then return everything to the saucepan.
  3. Cook on low heat for another 2–3 minutes, whisking, until smooth and glossy.

Step 4: Split the Pudding

  1. Divide the hot pudding mixture evenly into two bowls.
  2. Into one bowl, stir in the chopped chocolate until melted and combined.
  3. Into the other bowl, stir in the vanilla extract.
  4. Add 1 tablespoon of butter to each bowl and stir until creamy.

Step 5: Chill and Serve

  1. Pour the chocolate pudding into serving glasses or bowls, then top with vanilla pudding (or swirl them together).
  2. Cover with plastic wrap, pressing it gently onto the surface to prevent a skin from forming.
  3. Chill in the refrigerator for 2–3 hours, until set.

Serving Ideas

  • Top with whipped cream and chocolate shavings.
  • Add fresh berries for a fruity contrast.
  • Layer with crushed cookies for a parfait-style dessert.

Tips for the Creamiest Pudding

  • Use whole milk for best texture (or add a splash of cream for extra richness).
  • Constant whisking is key—this prevents lumps.
  • Always temper the eggs slowly to avoid scrambling.

✨ With its luscious texture and the perfect balance of chocolate and vanilla, this pudding is truly the creamiest, dreamiest dessert you can make at home.
