🍋 Lemon Pesto – 5 Minute No-Bake Recipe

A refreshing, creamy, and light twist on classic pesto! Perfect for pasta, sandwiches, grilled veggies, or as a dip.


Ingredients (makes ~1 cup):

  • 1 cup fresh basil leaves
  • ½ cup grated Parmesan cheese
  • ÂĽ cup pine nuts (or walnuts/almonds)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 3 tbsp)
  • 1 garlic clove
  • ½ cup extra virgin olive oil (add more for desired consistency)
  • Salt & pepper to taste

Instructions:

  1. Blend: In a food processor, combine basil, Parmesan, nuts, lemon zest, lemon juice, and garlic.
  2. Add oil: Slowly drizzle in the olive oil while blending until smooth and creamy.
  3. Season: Taste and adjust with salt and pepper. Add more lemon juice for tang or olive oil for silkiness.
  4. Serve: Use immediately or store in an airtight jar in the fridge for up to 5 days.
