Soft muffins

This time they will be perfect!

Ingredients:

2 eggs (about 115 g)
150 g of caster sugar
100 ml of vegetable oil
150 g of plain orange juice
1 tablespoon grated orange zest
A pinch of fine salt
200 g of all-purpose flour
10 g of baking powder

Preparation:

1. In a large salad bowl, beat the eggs with the sugar until you obtain a thick and airy mixture.
2. Add the oil, orange juice, zest and salt. Beat for about 3 more minutes.

3. Sift the flour and baking powder, add them to the mixture and mix until smooth.
4. Cover the salad bowl and place the mixture in the refrigerator for at least 1 hour (the longer it sits, the more aerated it will be).
5. Once the time is up, gently stir the dough to reactivate it.
6. Pour the mixture into paper muffin tins and sprinkle a little sugar in the center for a crisp touch.
7. Bake in a preheated 200°C oven for about 15 minutes, or until the muffins are golden brown.
8. Leave to cool on a rack. To taste!
