Ingredients

For the Filling:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped

  • 2 eggs, lightly beaten

  • 1 pack phyllo dough (about 250 g / 9 oz), thawed if frozen
  • 100 g (1/2 cup) unsalted butter, melted (or olive oil for brushing)

Instructions

Step 1: Prepare the Filling

  1. Heat olive oil in a large pan over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Stir in the spinach and cook until wilted (if using fresh) or until warmed through (if frozen). Drain excess moisture.
  4. Let the mixture cool slightly, then transfer to a bowl.
  5. Add crumbled feta, ricotta (if using), eggs, dill, salt, and pepper. Mix well until combined.

Step 2: Assemble the Triangles

  1. Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. Lay one sheet of phyllo dough on a flat surface. Brush lightly with melted butter.
  3. Place another sheet on top and brush again.
  4. Cut into long strips, about 3 inches wide.
  5. Place 1 tablespoon of spinach filling at the end of each strip.
  6. Fold one corner over to form a triangle, then continue folding like a flag until you reach the end of the strip.
  7. Brush the outside with melted butter and place on the baking tray.
  8. Repeat until all filling is used.

Step 3: Bake

  • Bake in the preheated oven for 20–25 minutes, or until golden brown and crispy.
