Instructions
Step 1: Prepare the Filling
- Heat olive oil in a large pan over medium heat.
- Add the onion and garlic, sauté until softened.
- Stir in the spinach and cook until wilted (if using fresh) or until warmed through (if frozen). Drain excess moisture.
- Let the mixture cool slightly, then transfer to a bowl.
- Add crumbled feta, ricotta (if using), eggs, dill, salt, and pepper. Mix well until combined.
Step 2: Assemble the Triangles
- Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
- Lay one sheet of phyllo dough on a flat surface. Brush lightly with melted butter.
- Place another sheet on top and brush again.
