Ingredients:

  • 1 medium seedless watermelon (about 6-8 pounds)
  • 1-2 teaspoons chili powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup (optional for extra sweetness)
  • Pinch of salt
    Directions:
  1. Start by slicing your watermelon in half, then cut it into thin strips (about 1/4 inch thick), making sure to remove the rind and seeds.
  2. In a small bowl, whisk together the lime juice, chili powder, cayenne pepper, honey (if using), and a pinch of salt until everything is nicely blended.
  3. Place the watermelon slices flat on dehydrator trays or parchment-lined baking sheets, and brush both sides with your tasty glaze.
  4. If you’re using a dehydrator, set it to 135°F (57°C) and let the watermelon dry for 8-12 hours, flipping halfway through. If you’re going the oven route, bake at 170°F (75°C) for 6-8 hours, leaving the door slightly ajar, and flipping every 2-3 hours.
  5. You’re aiming for that perfect chewy jerky texture—if it’s still sticky, just keep drying it a little longer.
  6. Once it’s ready, let your jerky cool completely, then store it in an airtight container or a zip-top bag. It’ll stay fresh for up to a week at room temperature, or you can refrigerate it for longer. Happy snacking!
