🥒 Crispy Zucchini Recipe (Tastier than Meat!)

Serves: 2–3
✅ Ingredients:
- 2 medium zucchinis
- 1 egg
- 1/2 cup breadcrumbs (panko for extra crunch)
- 1/4 cup grated Parmesan cheese (optional but tasty)
- Salt & black pepper, to taste
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Olive oil (for frying or drizzling)
👩🍳 Instructions:
- Prep the Zucchini
Wash and slice zucchini into thin rounds or sticks (like fries or chips). - Season the Breadcrumbs
In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper. - Coat the Zucchini
- Beat the egg in a separate bowl.
- Dip zucchini pieces in the egg, then coat with the breadcrumb mixture.
- Cook
Option 1 – Pan-fry:- Heat olive oil in a skillet over medium heat.
- Fry zucchini until golden and crispy (2–3 minutes per side).
- Drain on paper towels.
- Preheat oven or air fryer to 400°F (200°C).
- Lightly grease a baking tray or air fryer basket.
- Cook for 8–10 minutes, flipping halfway.
- Serve
- Serve hot with a dip like garlic yogurt, tzatziki, or marinara!
💡 Tip:
Want it vegan? Skip the egg and use a plant-based milk or aquafaba as the binding agent.
